Sliced venison sandwich with a tomato salsa

Ingredients

• 125gm venison
• Pinch salt and pepper
• 2 slices thick bread
• Garlic oil
• Mayonnaise or peri peri mayonnaise
• 2 lettuce leafs

Ingredients Salsa

• 1 large red tomato cut into quarters sliced thinly and de seeded
• 1/2 red onion sliced thinly
• 8 basil leafs roughly chopped
• Pinch garlic crushed
• Pinch salt and pepper

Method

1. Make salsa mix all ingredients together.
2. Brush both sides bread with garlic oil.
3. Cook venison on heated grill until cooked to desired. Remove from heat and rest.
4. Place bread on grill plate and toast on both sides.
5. Spread mayonnaise over one side of toast then place lettuce on top.
6. Can leave venison whole or slice thinly and place top of lettuce.
7. Add salsa on top of venison then place other slab of bread on top to finish.
